Leftover Turkey "Noodle" Soup With Potato Gnocchi- Gourmet Organic Recipe

Ingredients

Organic Meat and Broth

  • 2 cups Organic turkey broth reserved from Christmas Dinner
  • 4 cups water
  • 16 oz Leftover organic turkey (white and/or dark meat) from Christmas Dinner, shredded

Organic Herbs and Spices

  • ½ tsp Watkins organic oregano
  • ½ tsp Watkins organic thyme
  • 1 tsp Watkins organic cumin
  • 1 1/2 tsp Watkins organic paprika (sweet)
  • ½ tsp Watkins organic black pepper
  • ½ tsp Watkins organic garlic powder
  • Salt to taste

Organic Produce

  • 1" x 2" piece of fresh organic ginger, skinned and cut into 3 chunks
  • 1 Small head organic bok choy, coarsely chopped
  • 2 Fresh organic carrots, sliced
  • 1 Large organic Yukon Gold potato, unpeeled and cubed
  • 1 Large organic red potato, cubed unpeeled and cubed
  • ½ cup Cascadian Farms organic frozen peas

Potato Gnocchi

  • 1 package Emilia brand potato gnocchi

Methodology

  1. Slice carrots.
  2. Chop bok choy and ginger.
  3. Cube Yukon Gold and red potatoes.
  4. Place frozen peas on countertop bowl to thaw.
  5. Combine leftover organic turkey broth, organic meat, and water in large stockpot over medium-high heat.
  6. Add Watkins spices and herbs (oregano, thyme, cumin, paprika, garlic powder, black pepper).
  7. Add fresh ginger.
  8. Add carrots.
  9. Heat to boil.
  10. Add potatoes.
  11. Remove ginger chunks after about twenty (20) minutes of total time cooking.
  12. Confirm that carrots and potatoes are soft yet intact.
  13. Add potato gnocchi and peas.
  14. Cook six (6) minutes more and serve.

Substitutions and Tips

  • Consider rubbing the Christmas Dinner turkey with Watkins Spices paprika and cumin to infuse the organic meat and broth with additional flavor.
  • If reserved turkey broth totals more than two cups, substitute for water.
  • Make this soup with leftover organic chicken.
