Walking through holiday produce aisles, the brilliant reds of fresh cranberries call out to shoppers. Aside from traditional cranberry sauces, cranberry jellies, and cranberry desserts, cranberry condiments are yet another way to incorporate this holiday favorite into your Thanksgiving or Christmas dinner menu.

Fresh Cranberry Mustard

Use this distinctive cranberry mustard to glaze a Christmas ham, dress roasted Thanksgiving dinner turkey, in Black Friday leftover sandwiches, or as a dip for crackers, pretzels, or pita crisps.

Ingredients

  • ¾ cup Florida Crystal or Hain organic brown sugar
  • ½ cup Grey Poupon Dijon mustard
  • ¾ cup fresh, chopped Ocean Spray cranberries
  • ¼ cup Brer Rabbit molasses

Method

  1. Dice washed cranberries in a Cuisinart food processor.
  2. Bring all ingredients to a slow boil over medium heat in a heavy saucepan.
  3. Simmer cranberry mustard for five to ten minutes while stirring.

  • Makes: 1 ½ cups
  • Storage: up to one week refrigerated

Fresh Cranberry Ketchup (Catsup)

This tart cranberry ketchup is also wonderful on turkey sandwiches or as a glaze for sliced ham. Serve on Thanksgiving morning as a dip for bacon or substitute for tomato ketchup in a favorite meatloaf recipe.

Ingredients

  • 1 cup diced organic white onions
  • 2 cups fresh, whole Ocean Spray cranberries
  • 2 cups water
  • ½ cup Four Monks organic white distilled vinegar or organic apple cider vinegar
  • 1 cup Florida Crystal or Hain organic brown sugar
  • 1 tsp Spice Islands cinnamon
  • 1 tsp Frontier organic red pepper flakes
  • 1 tsp Spice Islands ground ginger
  • ½ tsp salt
  • White pepper to taste (substitute black pepper if necessary)

Method

  1. Add onions and cranberries to boiling water in medium saucepan.
  2. Reduce heat to medium and cook until onions soften and cranberries burst.
  3. Puree in Cuisinart blender or food processor until mixture is smooth.
  4. Return to pan and add vinegar, brown sugar, cinnamon, red pepper flakes, and ginger.
  5. Simmer for twenty minutes or until cranberry ketchup thickens, stirring periodically.
  6. Add salt and pepper to taste.
  7. Refrigerate before serving.
